The basic recipe of Dhokla is almost the same everywhere with a variation in the main ingredient. The original Gujarati Dhokla is prepared with a fermented batter of split chickpeas and rice.  It is pale yellow or white in color. It is slightly less spongy in texture when compared to Khaman dhokla.

The food has a good nutrition value and the use of fermented lentils make the dish rich in protein and fibre. It is good for diabetic people as the dish releases low glucose. A very little oil is used and it is steamed which makes it even healthier with only 160 calories for 100 g of Dhokla.

The Khaman Dhokla recipe has the ingredient called besan which is gram or chana dal flour One uses curd, semolina and lemon juice as the ingredients for the dish as well. The texture of Khaman is spongier and soft. It is also bright yellow in color. Along with the basic version of Khaman, you can also find Masala Khaman, Nylon Khaman, Amiri Khaman, and Vati Dal Khaman.

Rava Dhokla, Toor Dal Dhokla, Khatta Dhokla, and Rasia Dhokla are some other variations of the dish that you can find. Rava dhokla has suji as the main ingredient while toor dal dhokla has toor dal as the main ingredient. Rasia dhokla is dipped in syrup.
